WHere is a home-style interpretation of a drink found on our latest cocktail list. It's a large-volume pre-mixed which is packed with the tastes of a Christmas time, making it perfect for hosting a celebration. Save the extra citrus syrup for brunch beverages, desserts, or for additional servings of the drink.
The Bikini Cocktail
Serves 10 people
Ingredients for the Clementine Cordial (produces 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar
To make the Drink (produces 850ml, enough for 10)
400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml clementine cordial (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, as a final touch
Instructions
For the Syrup: Combine the listed components into a pan, heat until it reaches a simmer, agitating so the sugar melts. After that, take off the stove and let it to reach room temperature entirely. Pour to a sterilised bottle, seal and refrigerate it in the fridge, it will last for around four weeks.
To make Batch Mix: Mix all the spirits and syrup into one big jug, allow it to infuse for an hour, then pass it through , ideally through muslin, so it's completely strained.
For serving: Measure 85ml of your premix into your stirring glass packed with ice, gently stirring lightly for about 60 seconds until cold. Strain to a chilled martini glass or a similar vessel, decorate with a few cranberries adding the final touch using a brief mist with the mandarin essence over the top.
